I Went From Never Thinking About My Pan to Reading Cookware Labels Like a Chemist
But once I started actually reading the research, I couldn't unsee it. Here's what I found, and what I ended up doing about it.
If You Think "PFOA-Free" Means Your Pan Is Safe
I used to check for one thing on a cookware label: "PFOA-free." That was my whole system. If I saw those words, I assumed the pan was fine and moved on.
I didn't know that PFOA is just one chemical out of a family of thousands called PFAS, per- and polyfluoroalkyl substances. People call them "forever chemicals" for a reason: the bond that makes them useful for nonstick coatings is the same bond that means they don't break down, not in a landfill, not in water, not in your body.
A pan can be completely PFOA-free and still be coated in PTFE, a different PFAS compound, the same base chemistry behind Teflon. The "PFOA-free" label technically isn't lying. It's just answering a much narrower question than most of us assume it is.
In a 2020 study, the Ecology Center's Healthy Stuff Lab tested 14 nonstick cooking pans across a range of brands and price points. 79% came back coated with PTFE. In a 2021 follow-up specifically testing pans marketed as "PFOA-free," two of the four pans tested were still coated with PTFE anyway.

This isn't a fringe concern. The International Agency for Research on Cancer classifies PFOA specifically as a possible carcinogen. PFAS compounds as a category have been found in drinking water systems across the country. None of that requires a coating to be disclosed on the box.

What I Learned About Coating-Free Cookware
Once I understood the actual problem, the fix wasn't "find a better coating." Every coating, no matter how it's marketed, is still a layer of something sitting between the metal and your food, and I no longer trusted a label to tell me what that something actually was.
The only way to fully sidestep the question was to stop using anything with a coating at all. That's what led me to solid titanium cookware, pans where the cooking surface is the metal itself, not something sprayed onto a cheaper metal underneath.
The obvious worry: without any coating at all, won't food just stick? That's what I assumed too, until I found Okura's Hand-Hammered Titanium Pan.
