Why we ran this test
This one started with a reader question: is a "hybrid" pan actually worth the price jump over a regular non-stick, and if so, which hybrid pan? Okura sells five sizes, 8", 9", 10", 11", and 12", each with an optional matching lid at a fixed add-on price. HexClad sells five sizes too, 7", 8", 10", 12", and 14", and lets you add a lid via a selector on the same product page, though the incremental lid price wasn't exposed on every size we checked. Cooking surface and construction
This is the part I cared about most. Both brands lead with "no forever chemicals" messaging, but the two pans are built on fundamentally different ideas of how a cooking surface should work.

Both brands avoid PFAS and PTFE, but they get there differently. Okura's surface has nothing applied to it at all; the titanium itself is the whole story. HexClad's ridges do keep the ceramic coating in the valleys somewhat shielded from direct utensil contact, but it's still a coating sitting underneath a pattern, and coatings wear over time in a way a solid metal surface simply doesn't. That's the core tradeoff here: Okura is simpler by design, while HexClad depends on a coating holding up.
How food actually releases
Specs are one thing, eggs sticking to a pan at seven in the morning are another. I ran the same rotation on both: eggs, salmon, seared steak, sautéed vegetables, for the full 90 days.

Both pans release food well once you're a few cooks in. HexClad's exposed steel ridges provide a solid searing surface, but the actual nonstick performance still depends on the ceramic coating in the valleys, and HexClad's own instructions ask for a seasoning step and note it improves with re-seasoning, which is coating-maintenance language. Okura skipped that entirely and performed just as well from the very first fry, with no coating to maintain in the first place.
Heat distribution and control
A pan with hot spots ruins searing and burns sauces. I checked how evenly each pan heated across the surface and how it responded to quick temperature changes.

This is one of the more clear-cut categories. Okura's solid titanium build distributed heat evenly with no real hot spots, and it carries the higher published heat ceiling of the two, 1,000°F versus HexClad's 900°F. HexClad's aluminum core does its job too, but the pan runs hotter faster than expected at a given dial setting, which took an adjustment period. Neither pan burned food once we got used to it, but Okura required less recalibration.
Cleaning and everyday care
This is the routine you actually live with. Both claim to be dishwasher safe and metal-utensil friendly, so the real difference is in the small details of upkeep.

Day to day, both pans are easy to live with. HexClad's ridge design does reduce direct scrubbing contact with the coating underneath, and being able to use steel wool without worry is a real convenience. Okura's simpler build still wins on effort, though: no seasoning, no re-seasoning, no coating whatsoever to think about. Wipe, wash, done.
Safety claims and what's disclosed
Both brands lead with "no forever chemicals" messaging, but they're making different kinds of claims. Okura is arguing there's nothing to test for in the first place, while HexClad is arguing its coating tested clean. Here's what each actually discloses.

- Publishes a third-party lab test panel on the product page, run by Light Labs, checking for PFOS, PTFE, PFOA, PFAS, PFPeS, PFBS, PFNA, and several other compounds, every result listed as "Non-Detect"
- The panel tests the ceramic coating for the compounds listed; it doesn't speak to how the coating performs as it ages, which is a separate question from whether it's currently PFAS-free

These are two different ways of answering the same question. HexClad tests its coating against a specific list of compounds and publishes the results, which is a real, verifiable disclosure. Okura's approach is different but not weaker: there's no coating to test in the first place, so there's nothing that can degrade, flake, or migrate into food over years of cooking.
