This is where the two pans actually diverge, even though they look similar at a glance. Both have a hammered titanium surface. What's underneath that surface is a different story.

A pan with hot spots ruins searing and burns sauces. I checked how evenly each pan heated across the surface and how it responded to quick temperature changes.
