Why we ran this test
This one started with a reader question: is a titanium pan actually worth the price jump over a regular non-stick, and if so, which titanium pan? Taima sells three — 10.2", 11", and 12" — as a pan only; there's no listed price to add a lid to a single Taima pan at all, since lids on Taima's site only show up bundled free into its multi-pan sets, and that offer was tied to a July 4th promotion whose banner is still displayed on their site as of this writing in August. At the closest matching size (Okura's 10" against Taima's 10.2"), Okura's pan-only price is $109.95 versus Taima's $149, and Okura's pan-with-lid price of $129.95 is still cheaper than Taima's pan alone.
So I cooked on both, daily, for about three months. Steaks, eggs, sautéed vegetables, the whole rotation. Food release watched. Scratches checked. Warranty terms read line by line. Here is what I found.

Cooking surface and construction
This is the part I cared about most. A titanium pan's whole pitch is what it's actually made of and how the surface releases food, so I read both spec sheets closely and tracked how each surface held up over 90 days of daily cooking.

Both are real titanium pans, just built on different philosophies. Taima's higher stated heat ceiling is a separate claim worth a closer look, below. Where Okura pulls ahead for me is simplicity: a solid titanium cooking surface with nothing layered or patterned onto it, so there's less to wear down or fail over time, and a lighter pan overall since it isn't clad in aluminum and steel. If you want the simplest possible build with less that can go wrong, Okura is the more straightforward pan.
Taima's 1,112°F beats Okura's 1,000°F on paper, but neither is reachable in normal cooking — ovens top out around 550°F and oil-based searing rarely clears that either. A pan would need to run empty on high for a long stretch to approach these numbers at all.
There's also a wrinkle in Taima's figure: its build is titanium clad over an aluminum core, and pure aluminum melts around 1,220°F. That puts 1,112°F only ~108°F below the melting point of one of its own layers — and aluminum softens well before it melts. The rating likely reflects the titanium face, not the full assembly. Okura's solid-titanium build has no such bottleneck, since titanium itself doesn't melt until ~3,034°F — so its lower number carries more real margin than the raw comparison suggests. Neither spec is dishonest, just easy to over-read.

How food actually releases
Specs are one thing, eggs sticking to a pan at seven in the morning are another. I ran the same rotation on both: eggs, salmon, seared steak, sautéed vegetables, for the full 90 days.

Both pans genuinely release food well once you're a few cooks in, and both rely on a textured surface to do it — Okura's comes from the hand-hammering process itself, Taima's from an engineered micro-ridge pattern it calls SlipScale. Taima asks for a short seasoning step before that pattern performs at its best. Okura skipped that step entirely and performed just as well from the very first fry, and Okura specifically markets the surface as getting better with use rather than needing upkeep to stay that way. If you want to cook the moment it arrives with zero prep, Okura has the edge. If a more deliberately engineered ridge pattern appeals to you, Taima delivers on that.
Heat distribution and control
A pan with hot spots ruins searing and burns sauces. I checked how evenly each pan heated across the surface and how it responded to quick temperature changes.

This is the routine you actually live with. Both claim to be dishwasher safe and metal-utensil friendly, so the real difference is in the small details of upkeep.

Okura's simpler build means one less thing to think about: no seasoning step, no layers to worry about over the decades, just cook and wash. Neither gave us maintenance headaches over the test period.
Safety claims and what's disclosed
Both brands lead with "no PFAS, no chemicals" messaging. We looked at what each company actually backs that up with.

Taima is more specific about its metal, with a stated purity percentage and a named testing lab; Okura leans on the simplicity of an uncoated surface, a longer public review history, and TV-show "as seen in" branding instead. We can't independently verify either company's lab claims, so weigh both as brand-stated.
